1 package of wide noodles (12 oz = 340 gram)
1/2 cup sugar
1 package of part skim Ricotta cheese (15 oz- 425 gram)
1 teaspoon vanilla extract
1 teaspoon cinnamon
1/2 cup nuts or raisins (optional)
Cook noodles in water according to instructions on noodles box.
Mix in a bowl: cheese, eggs, sugar, vanilla (and nuts if using).
When noodles are cooked, drain and mix with the cheese mixture.
Pour into an oiled pan. Bake in a 350 degrees oven for about 20-30 minutes.
You can cut little pieces of butter and spread on top before putting in the oven.
You can also add other soft cheeses or even sour cream if available.
|Butternut Squash Soup

Prep Time: 10 minutes
Cook Time: 40 minutes
* 1 butternut squash, peeled
* 2 tablespoons unsalted butter
* Salt and pepper
* 1 onion, chopped
* 4 cups chicken stock (or water with chicken soup powder)
Cut squash into 1-inch chunks.
In a large pot melt the butter.
Add onion and cook until translucent, about 8 minutes.
Add squash and stock.
Bring to a simmer and cook until squash is tender.
Blend with hand blender
(or mash it for not so smooth texture if you dont have a blender).
Stir and season with nutmeg, salt, and pepper.
|Tomato and Rice Soup
1 medium onion
1 can tomato puree (big can of 1 lb 12 oz =749 grams)
1 can tomato sauce (15 oz = 425 gram)
water (fill up the big can)
5 tablespoons of rice
salt, pepper, 1 teaspoon sugar, about 1/2 lemon
Saute chopped onion in olive oil.
When soft, add the tomato puree and tomato sauce.
Add water -fill the big puree can, 5 tbsp of rice, salt, pepper, sugar and a
little bit of lemon juice.
Bring to a boil
(make sure you mix it often so the rice won;t stick to the pot).
Lower to very low heat and cook for about 20 minutes.
Adjust to taste.
The soup comes out pretty thick.
If you like it more diluted, you can add a little more water.
Ingredients for Dough:
200 grams butter room temperature
1/2 cup vegetable oil
1 cup water
3 1/2 cups flour (as needed)
Instructions for Dough:
Start mixing all ingredients except the flour in a mixer.
Start adding the flour slowly.
You probably will need more flour,
...the dough should not be sticky and will feel comfortable to work.
This dough can be prepared in advance and stored in the refrigerator for a day or so.
Ingredients for the Filling:
1 package ricotta cheese (I have used Trader Joes 15 oz = 425 gram package)
1 package feta cheese
(I have used Trader Joes Authentic Greek Feta 10.5 oz = 298 gram package)
Instructions for the Filling:
Crumble the Feta cheese, then add Ricotta and egg.
Taste the filling and add more or less of the ingredients to your taste.
Putting them Together:
Roll the dough, cut circles using a cookie cutter.
Put a spoon full of the filling in the middle and fold to make a crescent moon.
Push the edges closed with your fingers. Repeat the process.
Brush the Bourekas with an egg wash (beat an egg plus a few drops of water).
Sprinkle with sesame seeds.
Bake in a 380 degrees oven for about 20 minutes, until it starts to look golden.
As you probably can see, this recipe is not very accurate or scientific; still it should work.
250 grams sesame seeds (about 1/2 a pound)
2 egg whites
1/2 cup sugar
1/2 tsp vanilla extract
Beat a little the egg whites with a fork, add sugar, sesame seeds and vanilla.
Drop full teaspoons on a baking sheet lined with parchment paper, leave space between.
Bake in a 350 degrees oven, start checking after 10 minutes, it should look golden.
When ready let it cool, can be eaten as is,
.... or spread Nutella on half of the cookies and make sandwiches.
|Chocolate Health Balls
1 cup raw almonds
5-6 pitted dates
1 tbsp honey
1 tsp vanilla extract
2 tsp cocoa powder
Chop it all together in the food processor.
Make balls, you can dip them in sesame seeds or coconut flakes.
Put in the freezer for a couple of hours.
|Vegetarian Chopped Liver
4 medium onions
4 hard boiled eggs
1 cup toasted almonds
( I have baked raw almonds in a
200 degrees oven for about 20 minutes)
1 1/2 cups defrosted green peas
(or a can of green peas)
salt and pepper
Saute the chopped onions till translucent.
When the onions have cooled off,
put all the ingredients in the food processor until pureed.

2 cups of walnuts
(1 cup ground completely;
and the other cup ground a little less so it will still have some texture )
1/3 cup of very fine sugar
(I run it for a short time in the food processor)
2 sticks of butter, partially softened
2 cups of flour
1 teaspoon of vanilla extract
Combine the ground walnuts with the flour.
Cream the butter and sugar, add vanilla and dash of salt.
Add slowly the flour nut mixture until it crumbles.
Make balls or any other shape you would like.
(I have found out that creating small balls is the easiest,
since the dough is a bit sticky).
Bake at 325 degrees (F.) for about 17-19 minutes (till slightly brown).
Dip in powdered sugar when it cools off.

2+1/4 cups of all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda powder
2 teaspoons cinnamon
1 teaspoon ground clover
a pinch of nutmeg
3/4 cup brown sugar
1 cup honey
1 cup Coca Cola
3/4 cup canola oil
pieces of walnuts (optional)
Mix dry ingredients (except sugar).
Cream sugar with eggs, add honey and oil.
Add slowly the dry ingredients to the wet ones,
mix, and then add the Cola.
Bake at 325 degrees F. for about an hour.
as it depends on oven and size/shape of pan).

* A little more than 1 pound dry garbanzo beans.
* About 1 cup of Tahini paste
(NOT the ready one with spices)
* About 1 cup of water
(either cooking water, or just plain water)
* 1-2 garlic cloves
* Lemon juice from 1-2 lemons
* Salt to taste
Start by soaking overnight the dry garbanzo beans.
The next day, wash and strain them.
Then cook them in plenty of water for about 1 1/2 -2 hours (until they are completely soft).
Strain, but keep some of the cooking water.
NOTE: You can skip the above part and use canned garbanzo beans.
. Wash and strain a little more than 1 pound of the canned garbanzo beans.
Put into a food processor all of the ingredients:
. Garbanzo beans, + Tahini paste, + cup of water, + the garlic cloves, + lemon juice.
. Salt to taste.
Run the food processor till smooth. And you're done.
Feel free to add more or less of any of the ingredients, to your taste.
4 cups (560 g) flour
2+1/2 teaspoons baking powder
1/2 teaspoon baking soda powder
1/2 teaspoon salt
1/2 teaspoon black pepper, grated
200 grams of butter, cut into cubes
(a little less than 2 sticks)
1 cup plain yogurt with at least 3% fat
1/2 cup (120 ml) milk
100 grams of feta cheese, crumbled
100 grams of olives, pitted and coarsely chopped.
(I use the Israeli brand, it is sold pit-less,
but you can use any, to your taste)
100 grams of fresh herbs mixture
(e.g. oregano, thyme, moss, rosemary)
[ I would say that if you don't have fresh,
just use dried ones. ]
50 grams of dried tomatoes in olive oil,
strained and cut
* Pre-heat the oven to 400 degrees.
* Mix the flour, baking powder, soda powder, salt and pepper in a bowl.
* Add the butter and process with your fingers until you get crumbly dough.
* In a separate bowl, mix the yogurt, milk and egg into a uniform mixture.
* Make a well in the dough crumbs and pour the batter into it. Mix with a
wooden spoon until you get a uniform dough.
* Add the feta, olives, herbs and dried tomatoes and stir.
* Flour the work surface and roll over the dough, 1 1/2 to 2 cm thick.
* Flour the top of the dough, cut it into circles and transfer to the baking
pan. Collect the remaining dough and repeat the process.
* Bake for 17-20 minutes, until golden.
|Bee Sting Cake
150 gram ricotta cheese (about)
6 tbsp milk
6 tbsp oil (I have used canola oil)
1/3 cup sugar
2 1/4 cups flour
3 tsp baking powder
1/2 cup sugar
50 gram honey (about)
1 stick butter
2 tbsp milk
100 gram sliced almonds (about)
1 small package vanilla instant pudding
1/2 cup milk
1 small container whipping cream
* To prepare the dough, put all the ingredients in a food processor till
combined, don't over mix (or you can mix it in a bowl). I pour it all into a
greased pan and press it in with my fingers.
* Meanwhile, bring to a boil on a low heat sugar, honey,butter, milk. Take it
off heat and add the sliced almonds, mix and let it cool.
* Pour the cooled filling on dough and back at 360 degrees for about 20
minutes or so.
* When the cake has cooled off, take it out of the pan, slice horizontally.
* Prepare the cream by whipping cream, milk and instant vanilla mix.
* Spread on the bottom half of the cake, cover with the top half.
I use a 26 cm round pan, which Iguess is around 10 inch, but you can use
another shaped pan.
A couple of notes:
* I suggest putting parchment paper on the pan, otherwise it sticks and is
very difficult to take out, clean later.
* The hardest part for me is to put back the top half without breaking it. I am
usually not very successful...So it might not look perfect but is pretty tasty...
